Hungarian Sweet Pepper (Capsicum annuum) is a classic, mild “banana” type that starts pale yellow and ripens to orange-red with a gentle sweetness and crisp bite. Long, tapered fruits (6–8”) shine in salads, sandwiches, and are excellent for stuffing, roasting, and pickling.

Productive, compact plants reach 18–24 inches and set generously in warm weather. Peppers can be harvested at any stage—pick pale yellow for the classic sweet-tart flavor, or allow to fully color for richer sweetness and thicker walls.

Thin skins and consistent shape make these peppers a favorite for jars and quick refrigerator pickles. In the kitchen, they sauté quickly, keep texture on the grill, and add a bright, sweet note to many dishes.

Start indoors 8–10 weeks before last frost. Maintain warm germination temps (75–85°F). Transplant outdoors after nights are consistently above 55°F and soil is warm. Choose a sunny site with fertile, well-draining soil.

Set plants 18–24 inches apart in rows 24–36 inches. Mulch to retain moisture and warm the soil. Keep evenly moist—avoid fluctuations that can cause blossom end issues. Support with small stakes if heavily loaded with fruit.

Harvest at pale yellow for classic mild flavor or at full color for maximum sweetness. Frequent picking encourages continued set. Fertilize lightly at transplant and again at first fruit set for best yields.
