Answers to your questions

  • What makes the cocoa better? It's the craftsmanship learned over decades.  And it's the cocoa butter.  We've been testing cocoa for 20  years. We've never found a good cocoa that doesn't have at least 16% cocoa butter. This has 22 to 24% cocoa butter.
  • I understand that cocoa butter is a big deal, but what do the stores have? The most popular brands have 8 to 10%, a fraction of what really good cocoa has.
  • Why don't they use the good stuff?  It's too expensive. Grocery stores compete on cost.
  • How can you compete? People will pay more for a better product. And we don't have the overhead that a grocery store has. Grocery stores have to locate where the people are. We're located in a bunch of fields. It costs less to do business in the country and we don't have the overhead.

How to Make Cheesecake Brownies

This has quickly become our most popular brownie recipe. Grab a mix and give it a try.

Make a simple cream cheese batter and swirl it into your brownie batter before baking.  It's that simple. You should be doing this often.

This is a scrumptious marriage of cheesecake and brownie. This is an easy recipe because you start with a mix, and the cheesecake filling is simple. 

1 Uncle Bob's Brownie mix
2 8-ounce packages of cream cheese
1/2 cup granulated sugar
1 teaspoon vanilla extract
4 large egg yolks

Preheat the oven to 325 degrees. Lightly grease a 9 x 13-inch baking pan. Dust with flour or line with parchment paper.

  1. Mix the brownie batter according to mix instructions. Set aside.
  2. For the cream cheese filling, beat the cream cheese until fluffy. Add the sugar and vanilla and beat in. Add the egg yolks and beat until smooth. Set aside.
  3. Pour half of the chocolate batter into the prepared pan. Spoon half of the cream cheese filling onto the batter in pools. Pour the rest of the chocolate batter over the cream cheese pools. Spread smooth. Spoon the remaining cream cheese filling in pools over the top of the brownie batter.
  4. Hold a table knife or spatula vertically and cut through the batters just until the two batters are swirled together. Do not over-mix.
  5. Bake for 35 to 40 minutes or until the brownies test done by sticking a toothpick or knife into the center of the pan. The brownies will be done when moist crumbs cling to the toothpick or knife. Let the brownies cool completely before removing them from the pan.

 

How to make Hot Fudge Brownies



    This is really a ganache recipe. Ganache is usually made with hard chocolate but you can use high quality, high cocoa butter content cocoa.   

    Ingredients

     

    Directions

    1. Mix the cocoa and sugar together in a small bowl. Be sure it is well mixed to avoid any lumps.
    2. Melt the butter in the microwave. 
    3. Add the cocoa and sugar mixture to a small saucepan. Add the melted butter and cream. Heat, stirring constantly with a wire whisk, until everything melts together and the ganache starts to bubble. Remove the pan from the heat.
    4. Let the ganache cool until it reaches the desired consistency. Thin with additional cream if necessary.

    We have made this both with 2/3 cup and 3/4 cup cocoa. Both work. Of course, you get a little deeper flavor with 3/4 cup cocoa. As with other hot fudge sauces, this thickens as it cools.  You can reheat it in the microwave.

    Andy Greenberg is a GREAT storyteller and podcaster. Anything he writes is a must read. Tracers in the Dark was a super enjoyable, easy read. He covers, using people and stories, the basics of bitcoin and the people who try to follow the money to catch cybercriminals. I knew most (but not all) of the people and stories he covered, but Greenberg added a ton of detail I didn't know. He added timelines and color that fleshed out what happened, in each story and the overall timeline. It's a great, easy, read and I'm a better cybersecurity defender for having read it. Although don't read it for any super technical details. You're not going to learn the details of blockchain, bitcoin, or blockchain analysis...only how it's done, generally, and the people involved.
