There are approximately one hundred and fourteen known species endemic to Mexico, where the plant is a common ingredient in numerous Mexican cuisine dishes. The nopal pads can be eaten raw or cooked, used in marmalades, soups, stews and salads, as well as being used for traditional medicine or as fodder for animals. Farmed nopales are most often of the species Opuntia ficus-indica or Opuntia matudae although the pads of almost all Opuntia species are edible. The other part of the nopal cactus that is edible is the fruit called the tuna in Spanish, and the "prickly pear" in English.

Nopales are generally sold fresh in Mexico, cleaned of spines, and sliced to the customer's desire on the spot. They can also be found canned or bottled as nopalitos, and less often dried, especially for export. Cut into slices or diced into cubes, nopales have a light, slightly tart flavor, like green beans, and a crisp, mucilaginous texture. In most recipes, the mucilaginous liquid they contain is included in the cooking. They are at their most tender and juicy in the spring.

Nopales are most commonly used in Mexican cuisine in dishes such as huevos con nopales "eggs with nopal", carne con nopales "meat with nopal", tacos de nopales, in salads with tomato, onion, and queso panela (panela cheese), or simply on their own as a side vegetable. Nopales have also grown to be an important ingredient in New Mexican cuisine[3] and in Tejano culture of Texas.

Ive tried a few different brands of biltong and made my own. I have to say that this wasn't my favorite. Believe me, i wanted to like it. Also, some of the bites left a weird coating and nasty taste on my tongue, like baking soda or something, but definitely an off taste. I had my own beef jerky store for several years, so I'm a connoisseur, but no snob. -----update 8/13/2019------- I contacted customer service via the email on the bag and got a response. They sent me a new bag and here is the email I sent them back. Very happy now. ....The biltong showed up last Thursday! I'm sorry i kept forgetting to email you. It is delicious. It's night and day difference between the bag I got through Amazon originally. This bag was pristine and the taste is spot on. Every piece is a perfect slice, no shreds or fluff. Dark, rich brown color, not hay colored like the old bag. I really think that the other bag got very hot or something and out the taste off. Thank you so much. Now I know that if I am in the mood for biltong, Ayoba-yo is a good choice. Thanks for the customer service as well.....

I had a hankering for jerky and found biltong instead. I didn’t know what made it different, but I was willing to try. I was very surprised how moist it was!! It’s better than the jerky here. If I wanted to gnaw on leather then I’d get my belt instead of paying money for dried meat. I liked that it didn’t have sugar. However , the flavor was confusing. It was mostly sour, like too much vinegar. Other reviewers mentioned that too and I must agree. I’m not sure how it’s suppose to taste but this experience makes me hesitate buying any more.
